Traveling at high altitude means that the air is drier than it is at sea level, so people's sinuses close up and their sense of taste is diminished by the low humidity.
Another factor adding to the lack of flavor offered by in flight meals is how fresh they are.
Every meal is precooked before being frozen or chilled, and then reheated and served onboard.
But airlines are working on a few ways to improve the meals they serve.
One tactic being implemented is serving Indian style dishes that are prepared with enough spices so that passengers can still taste the food with closed sinuses.
Other attempts to make airplane food tastier involve hiring celebrity chefs to come up with recipes that withstand the in flight conditions.
